Tweak a Week #3 - Pineapple

Pineapple Salsa

  • 2 cups diced fresh pineapple

  • 2 medium tomatoes, seeded and chopped

  • 3/4 cup chopped sweet onion

  • 1/4 cup minced fresh cilantro

  • 1 jalapeno pepper, seeded and chopped

  • 1 tablespoon olive oil

  • 1 teaspoon ground coriander

  • 3/4 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon minced garlic

  • Tortilla chips

Pineapple – The pineapple is not only packed with vitamin C, manganese, vitamin B1 & B6, copper, magnesium and fiber it is rich in bromelain, a group of sulfur-containing proteolytic (protein-digesting) enzymes. These enzymes aid in digestion and reduce inflammation and swelling. It has been proven to be very powerful in reducing swelling in inflammatory conditions such as sore throat, sinusitis, arthritis and gout, and carpal tunnel syndrome. In order to maximize the anti-inflammatory and digestive properties pineapple is best eaten alone, between meals to prevent its enzymes from being used up digesting food.

Pineapple is a good source of manganese which promotes energy production and is packed with anti-oxidants that protect the body against free radicals. This quality makes it helpful in preventing heart disease, treat asthma, osteoarthritis and rheumatoid arthritis. The vitamin C is crucial in proper function of the immune system making it helpful in preventing recurrent ear infections, colds and flu.
