Potato, Leek & Spinach Soup
3 large Leeks sliced (* Tips for Cleaning below)
1 pound new or small potatoes, halved and thinly sliced
4 cups reduced-sodium chicken broth (I prefer Chicken Bone Broth)
8 ounces spinach, stemmed and chopped (Chard is nice here too!)
1 bunch scallions, sliced
1 Cup sliced Carrots
1 15-ounce can cannellini beans, rinsed
½ cup chopped fresh herbs, such as dill, chives and/or parsley
Tip: To clean Leeks:
