Lime in da Coconut


Lemons & Limes are another option for citrus and contain most of the same health benefits that oranges and grapefruits. However, these fruits are less likely to be eaten whole and are more likely to be used as a juice or in water for flavor, or in recipes for flavor and added nutrients. They are powerful antioxidants and loaded with vitamin C while being very low in calories. The flavonoids in these fruits have antibiotic effects and have been useful in preventing and treating diseases like cholera. Again, the high concentration of vitamin C supports the immune system. It is easy to add a touch of these fruits to the daily diet via using their rind for zest in recipes, putting slices in water or tea, or using the juice in salads, recipes, or on other fruit to keep from browning.

Lime Coconut Cooler

1 Cup canned coconut milk

¼ cup lime juice (fresh from 1-2 limes)

1/3 cup mint leaves (optional)

4 tsp honey (more or less!)

2 cups crushed ice

Place all ingredients except ice in a blender and run until well blended. Add ice and blend again until desired consistency.
