Cover your Date in Chocolate!
Date Dark Chocolate Truffles
½ Cup pitted Prunes
¼ Cup pitted Dates
3 TBL Almond Butter (or Cashew or other preferred healthy nut butter)
1 TBL Pure Maple Syrup or Honey
3 TBL Unsweetened Cocoa
½ Cup finely grated Unsweetened Coconut
Drop the prunes and dates into a food processer and run, scraping the sides frequently
Add the rest of ingredients except for the coconut and run until smooth, again scraping sides frequently
Roll the mixture into one inch balls (approximately 12) and roll in coconut
Refrigerate for ½ hour and serve
