Hot and Cold Squash Ideas


Butternut Squash Soup

1. Use the Healthy Steamed recipe above

2.Place in a blender with seasonings of choice (sea salt, pepper, ginger, turmeric, garlic, etc.) 1 ½ Cup vegetable broth or water, 3 TBL (or to desired taste and consistency) Coconut milk

3.Blend on high for 1-2 min until smooth and desired consistency

4.Optional additions are roasted red peppers, roasted garlic, or sautéed mushrooms

Pumpkin Pie Smoothie

Blend the following ingredients in a blender until smooth and of desired consistency. Add water, almond milk, or ice to achieve desired results

12 oz Almond Milk (or Vanilla Almond Milk) or Coconut Milk

8 oz canned or frozen Pumpkin Puree

Apx. 1 Cup Ice Cubes

1 Banana, fresh or frozen

1 tsp Vanilla Extract

1 tsp Pumpkin Pie Spice Mix

½ tsp Ground Cinnamon

Small amount of Stevia or Raw Honey

Optional, add ½ small Apple
